This is a quick and easy recipe which can be adapted in any number of ways. White chocolate chips, mint flavour, strawberry flavour, raspberry flavour, pecans, hazelnuts, icing, buttercream - the variations which could be created are endless.
I've opted to make mine with a chocolate orange flavour because I'm utterly addicted to the combination of chocolate and orange. Feel free to experiment though of course and, if the results are good, let me know so I can have a go myself!
Chocolate Orange Muffins
- 300g chocolate & hazelnut spread (I used Nutella)
- 2 large eggs
- 100g self raising flour
- 3-4 tablespoons semi-skimmed milk
- 1 teaspoon orange flavouring
- 3-4 tablespoons chocolate chips (optional)
Preheat an oven to 180C / 350F / Gas Mark 4.
In a large mixing bowl, combine chocolate & hazelnut spread, eggs, self raising flour, semi-skimmed milk and orange flavouring. Mix well until the mixture is smooth and the flour is completely incorporated into the mix. Add the chocolate chips if desired and mix once more.
Spoon the mixture into a cupcake tray lined with paper cases. The mixture should make around 8 large muffins or more if using smaller cases.
Bake the muffins for around 26-28 minutes or until a fork comes out clean when the muffins are pierced. Allow to cool in the tray for 2-3 minutes and remove to a wire rack to cool completely.
Top with icing or buttercream or simply serve as a chocolate orange sponge with some cream or ice-cream.
